When melting the chocolate, make sure to not overheat it. I simply microwave the chocolate in 30 second intervals and mix until I get the desired consistency. Most products will have melting instructions on the back.
Step 1
Get your silicone mold out and ready. While you are working on getting the chocolate inside, place it on top of a baking sheet for easy transfer to the fridge.
Step 2
Melt the chocolate according to the instructions on the package. There are a couple of ways to melt chocolate. I prefer the microwave since it's a quick and easy way to heat chocolate, but please do whatever you feel most comfortable with!
Step 3
Next, using a spoon, place the melted chocolate into the silicone mold. Use the back of the spoon to smooth the chocolate up the sides of the dome. You can do a thin second layer to strengthen the domes. Place in refrigerator for at least 30 minutes. If you find your hands are a little too warm and melting the chocolate when you touch it, place it back into the fridge. For this gold design, I used white chocolate for all the bombs.
Step 4
Now, you can get all your fillings ready for the chocolate bomb. Use some hot cocoa packs for the filling. Crush the peppermint candy fine enough that it will melt easily in the mix. To avoid messes, I place the peppermint candy in a ziplock bag, place a hand towel on top, and crush it with a rolling pin. If you want extra sweetness, add some marshmallows.
Step 5
Take a warm plate and put the chocolate mold on it to melt and make the edges less rugged. This way, the chocolate bomb will look seamless once put together. Carefully fill your mold with the hot chocolate, crushed peppermint, and marshmallows. Now warm the other end of the dome and then connect with the other dome.
Now, mix a little drop of lemon extract with a little bit of the gold dust. Use a paintbrush and paint on the top of the hot chocolate bomb. Add cool melted chocolate to the top of the dome and sprinkle on some crushed peppermint.
For packaging, place a cupcake liner under the hot chocolate bomb. It helps to keep it in place!
